I Made This Thing Called Yummy

Now if this does not make you drool, then I don’t know what will.




I have been wanting to make chicken enchiladas, but always felt it was a lot of work. I’m glad I gave this recipe a try, because I was so wrong about this dude. It’s a must to have it with Spanish rice and Pico de Gallo, of course, and I have all three recipes below for you guys. I personally hate beans in any form (with a few exceptions), that’s why if you’ve noticed, no beans here.

Chicken Enchiladas

3 tablespoons vegetable oil
1 whole rotisserie chicken, meat removed and shredded into strips
Salt and pepper
2 teaspoons cumin powder
1 red onion, chopped
2 cloves garlic, minced
2 cans green chiles
1 (28 oz) can Mexican stewed tomatoes
10 corn tortillas
1 1/2 cups enchilada sauce, canned
1 cup shredded Mozzarella and Jack cheeses
3 tablespoons olive oil

Directions:

1. Preheat the oven to 350 degrees F.

2. Saute onion and garlic in oil over medium heat, until tender. Add green chiles. Stir well to combine. Add canned tomatoes and cumin powder. Saute for about five minutes.

3. Add shredded chicken to saute pan.

4. Microwave tortillas on high for about 20-30 seconds, to soften.

5. Coat the bottom of 2 (13 x 9 inch) pans with enchilada sauce. Make sure to reserve 1/2 cup of enchilada sauce for topping. Dip each tortilla in enchilada sauce to lightly coat. Spoon chicken mixture in each tortilla. Fold over filling, place 8 enchiladas in each pan with seam side down. Top with remaining enchilada sauce and cheese. Drizzle some olive oil on top of cheese layer.

6. Bake for 15 to 20 minutes in a until cheese melts. Serve with Spanish rice, Pico de Gallo, and sour cream.










Spanish Rice

2 tablespoons vegetable oil
1 cup uncooked white rice
1 onion, chopped
1/2 green bell pepper, chopped
2 cups water
1 (10 ounce) can diced tomatoes
1 can green chiles
2 teaspoons chili powder
1 teaspoon salt

Directions:

1. Heat oil in a deep skillet over medium heat. Saute onion and bell pepper for five minutes. Add rice, and continue sauteing until browned, and onions and bell pepper are tender.

2. Stir in water, tomatoes, and green chiles. Add chili powder and salt. Bring to a boil, and simmer covered for 15 minutes, or until rice is cooked and liquid is absorbed. Fluff the rice with fork, and cover for another ten minutes before serving.

Pico de Gallo

1 1/2 cups seeded, diced Roma tomatoes
1/4 cup diced red onion
1 tablespoon diced jalapenos
2 tablespoons cilantro
Juice of 2 limes
Salt and pepper

Directions:

Combine all ingredients in a bowl.

As Promised

Oh, hai.

I know I committed to posting some recipes in one of my previous posts. I have not forgotten. What happened is I got distracted, that’s right.

Alright, so I have here this Chicken Pot Pie recipe from Ina Garten. I’m telling you, this recipe delivers.





Chicken Pot Pie

3 whole (6 split) chicken breasts, bone-in, skin-on
3 tablespoons olive oil
Kosher salt
Freshly ground black pepper
5 cups chicken stock, preferably homemade
2 chicken bouillon cubes
12 tablespoons (1 1/2 sticks) unsalted butter
2 cups yellow onions, chopped (2 onions)
3/4 cup all-purpose flour
1/4 cup heavy cream
2 cups medium-diced carrots, blanched for 2 minutes
1 (10-ounce) package frozen peas (2 cups)
1 1/2 cups frozen small whole onions
1/2 cup minced fresh parsley leaves

For the pastry:

3 cups all-purpose flour
1 1/2 teaspoons kosher salt
1 teaspoon baking powder
1/2 cup vegetable shortening
1/4 pound cold unsalted butter, diced
1/2 to 2/3 cup ice water
1 egg beaten with 1 tablespoon water, for egg wash
Flaked sea salt and cracked black pepper

Directions:

1. Preheat the oven to 350 degrees F.

2. Place the chicken breasts on a baking sheet and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken.

3. In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a Dutch oven, melt the butter and saute the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and heavy cream. Add the cubed chicken, carrots, peas, onions and parsley. Mix well.

4. For the pastry, mix the flour, salt, and baking powder in the bowl. Add the shortening and butter, and mix with a pastry blender, until flour and butter are combined to the size of peas. Add the ice water; mix only enough to moisten the dough and have it just come together. Dump the dough out onto a floured board and knead quickly into a ball. Wrap the dough in plastic and allow it to rest in the refrigerator for 30 minutes.

5. Preheat the oven to 375 degrees F.

6. Divide the filling equally among 4 ovenproof bowls. (I used one 9″ pie plate.) Divide the dough into quarters and roll each piece into an 8-inch circle. Brush the outside edges of each bowl with the egg wash, then place the dough on top. Trim the circle to 1/2-inch larger than the top of the bowl. Crimp the dough to fold over the side, pressing it to make it stick. Brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot.

I have baked my fair share of cookies in the past, and without a doubt, this New York Times Chocolate Chip Cookie recipe is the best one I’ve baked by far. What I really like about this recipe is that I don’t get this weird oily after taste, unlike some of the recipes I have tried in the past. You guys have to try it. It is important that you refrigerate the dough for at least 24 hours before baking. It’s well worth the wait, I promise.


NY Times Chocolate Chip Cookies

2 cups minus 2 tablespoons (8 1/2 ounces) cake flour
1 2/3 cups (8 1/2 ounces) bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons coarse salt
2 1/2 sticks (1 1/4 cups) unsalted butter
1 1/4 cups (10 ounces) light brown sugar
1 cup plus 2 tablespoons (8 ounces) granulated sugar
2 large eggs
2 teaspoons natural vanilla extract
1 1/4 pounds bittersweet chocolate disks (I used Ghirardelli Milk Chocolate Chips.)
Sea salt.

Directions:

1. Sift flours, baking soda, baking powder and salt into a bowl. Set aside.

2. Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients and mix until just combined, 5 to 10 seconds. Drop chocolate pieces in and incorporate them without breaking them. Press plastic wrap against dough and refrigerate for 24 to 36 hours. Dough may be used in batches, and can be refrigerated for up to 72 hours.

3. When ready to bake, preheat oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.

4. Scoop 6 3 1/2-ounce mounds of dough (the size of generous golf balls) onto baking sheet, making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie. Sprinkle lightly with sea salt and bake until golden brown but still soft, 18 to 20 minutes. Transfer sheet to a wire rack for 10 minutes, then slip cookies onto another rack to cool a bit more. Repeat with remaining dough, or reserve dough, refrigerated, for baking remaining batches the next day. Eat warm, with a big napkin. And a glass of milk.




In case anyone was wondering what else was on my plate, well, I recently finished knitting Bethel Woods Cardigan. It came out a little smaller than expected, but nothing blocking couldn’t fix.




I still have buttons to sew, but it is pretty much done. I just wish I knew better when I started this project, you know?

My next project (not the sock project that is in progress) is going to be more awesome, I swear! In fact, I have already casted on, and this one is a pattern I designed using my son’s measurements. It’s a really simple ribbed v-neck cardigan. I’m using size 3 needles. Tiny stitches, yup. Don’t even ask. All I know is this will probably be my first and last attempt with knitting a cardigan using fingering yarn. We’ll see.

Lollygag Only When Able

I just spent the entire evening in bed with the laptop, bouncing between creating a new website layout, combing through the pages of my favorite craft site, and playing Pocket Frogs on my iPhone. I probably would have finished this new website layout a lot sooner, but focusing on only one task at a time was never a strength of mine. I’m so glad I have the entire week off! I can’t wait to get my hands on some craft projects, and possibly bake a cake or two. If not for Presidents’ Week, I won’t have the time and energy to waste lollygagging ’til the wee hours. One week of sleeping in, no IEPs and lesson plans, booyah! For that, thank you, Presidents!

Wee Hours’ Craving

It’s August! We’re half way through 2010, folks. Can you believe that?! I have two more weeks left on my summer break, incidentally the same number of weeks remaining until I turn another year older. Bring it on, thirty three!

Moving along.

A couple of nights back, while I was dealing with yet another bout of insomnia, I stumbled upon this food blog which had an entry on Chicken Adobo, a classic Filipino dish which involves stewing chicken in three essential ingredients: vinegar, soy sauce and garlic. Lots of garlic. Mmmm. Reading the entry left me craving for the dish at four o’clock in the morning.

Did I end up preparing the dish?



Oh, yes I did.

Well, not right away… but I did, alright.

Every Filipino household has their own version of the dish, with recipes varying in ingredients and steps on how to cook. I learned this recipe from my mom, who learned it from her mom. I think what makes this a sublime dish is the combination of the three essential ingredients. The steps in preparing the dish aren’t as crucial, though. Mine basically involves marinating, frying, and braising. What I like is how easy it is to prepare this dish. It’s cheap, and best of all, delicious! Now who doesn’t want that? I say make it for dinner tonight!


Chicken Adobo

2 pcs boneless, skinless chicken breasts
4 pcs skinless chicken thigh, bone in
1 Tbs minced garlic, plus 1 Tbs for marinade
1/3 cup soy sauce, plus 1/3 cup for marinade
1/2 cup white vinegar
1/2 cup water
1 Tbs honey
1/8 tsp ground black pepper
2 dried bay leaves
2 Tbs olive oil

Directions:

1. Cut chicken breasts. Breast and thigh pieces should have similar sizes. Marinade chicken pieces with 1/3 cup soy sauce, 1/8 tsp ground black pepper and 1 Tbs minced garlic. Let sit for 30 minutes to an hour.

2. In a deep sauté pan, heat 2 Tbs olive oil over medium-high heat. Fry the chicken pieces, browning them on all sides, about 5 minutes each side. Add soy sauce and garlic from marinade.

3. Add vinegar, soy sauce and water into the pan. Add garlic, honey and dried bay leaves. Bring to boil, and reduce the heat to low. Continue simmering without stirring for about ten minutes. Cover and simmer for another 20 minutes, stirring occasionally.

4. Remove chicken from the pan, and transfer to a platter. Tent with foil. Continue simmering the sauce, uncovered, for about 10 minutes (until slightly thickened). Remove from the heat and pour sauce over the chicken.

Serve with steamed or garlic rice. Personally, I like having it with a ripe banana on the side.

Chicken Pomodoro

Who likes boneless chicken breasts? Who likes tomatoes? Who likes boneless chicken breasts with tomatoes? Now if you’re like my husband, Felix, who will eat anything with boneless chicken breasts and tomatoes, you will surely love this chicken pomodoro pasta. This dish is perfect for those lazy Saturday lunches, when you’d rather eat out because you can’t be bothered to prepare something. (And we all know eating out can get pretty darn expensive!) I got this recipe from Cook’s Country, and it’s really easy, I tell you. You know what, you probably even have most of the ingredients available, anyway, if not in your pantry, your fridge. So why not give it a try? Promise me you will?

Chicken Pomodoro

(serves 4)

4 boneless, skinless chicken breasts (about 1 1/2 lbs)
3 tablespoons olive oil
1/2 cup finely chopped onion
4 garlic cloves, minced
1 tsp dried oregano
1/4 tsp red pepper flakes
1 (14.5 ounce) can diced tomatoes
1/3 cup heavy cream
1/4 cup finely chopped fresh basil
salt
pepper

Directions:

1. Pat chicken dry with paper towels. Season with salt and pepper.

2. Heat about a tablespoon of olive oil in large skillet over medium-high heat. Cook chicken until golden brown, about 3 minutes per side. Transfer to a plate.

3. Heat remaining olive oil in empty skillet. Cook onion until softened. Add garlic, oregano, and pepper flakes. Stir in tomatoes, cream and 1/4 teaspoon salt. Bring to boil. Return chicken to skillet. Simmer covered, for about 10 minutes or until chicken is cooked through.

4. Remove chicken from the skillet and transfer to a platter. Tent with foil. Continue simmering the sauce, uncovered, for about 5 minutes (until slightly thickened). Remove from the heat and stir in basil. Pour sauce over chicken.

Serve with penne or angel hair pasta or rice. Whichever floats your boat.
